I bought a crock pot. It’s something I’ve wanted to do for a while but wasn’t sure if I could find enough vegetarian recipes for it. Turns out there are lots of options. Last week when I got it ($20 new off CraigsList), I immediately unboxed it and started making Hot Mulled Apple Cider. Nom nom nom.
Last night I prepared vegetarian chili (with meat substitute) to cook today. (I like to put chili on noodles and top it with cheese.) Speaking of food… I hope my American friends are having a nice Thanksgiving!
Now, if anyone has any fabulous crock pot recipes to share… I would love the suggestions!!

If you find that Robin Robertson book (or I can lend it to you at the Festivus par-tay), I definitely recommend the mushroom risotto. It’s not one that takes 8-10 hours, so not great for weekdays, but it’s super nommable. :-)

I love my crock pot too, especially on days when the kids have two million activities. I’m not sure though that I can help you much. We are big meat eaters, so I do beef and pork roasts mostly. I have asked for a crock pot cookbook this year for Xmas. Next August my son starts tackle football and practices are FIVE days a week! Lord help me.

The Knight is a crockpot fan, but he flies by the seat of his pants… Enjoy!

Crock pots are awesome. Our favorite is doing a roast. If you’d like the recipe, I’ll type it up for you. :-)

I like chili on spaghetti…or on a baked potato…yum!! You can cook soups in your crock pot, or lentils, or anything you’d cook on the stove top. Have fun.

It’s not really a recipe, but last week I used the crock pot to cook up one of those big bags of chicken breasts. I just threw them all in, added a can of chicken broth, and let it cook for like 6 hours. The chicken was really tender, and cooking it with the broth made the chicken taste more chicken-y.

I’ve got a bunch of crock pot recipes, but they all have some sort of meat. Sorry! :(
